At this point, I don’t have a reasonable explanation except “cutting corners” for demand.

I think the change has more to do with the low yield rates of new, high performance, chips. 50% yield would be mighty impressive for a chip. They make these by the millions knowing that the majority will not meet specs (and typically get repurposed, ex rejected memory chips for SSDs get used in USB drives) and a large portion will simply have to be thrown away. They do this with a lot of more complex components. A 6700 is just a 6700k that wasn’t good enough.
